Total ageing in the barrels took 9 months in the presence of lees without stirring them

This sparkling cider was made by fermenting spent red grape (Cabernet Franc and Merlot) skins from a friend’s Seneca Lake vineyard in juice pressed from our own organically grown Idared apples

The sit within the zones of Mezzane and Tregnano  planted in 2001

but not dominate (think overly salted dishes) the character of the Chardonnay sites

Great vintage with a rich nose, ripeness but still with balance, the mouthfeel is dense and a wine that is delicious and long with some tension.
