2019 MicroBio 'Microbio' Verdejo Rueda, Spain Cotar Both the alcoholic and malolactic100% Verdejo organically grown over sandy soils with gravel and clay deposits. Grapes are hand harvested, gentle pressing of the whole vintage (unlike some of his other wines), partial racking, and spontaneous fermentation with indigenous yeasts in stainless steel tanks and old foudre.
